I got this from my great cousin-in-law Steph. She made it for a Thanksgiving appetizer. I loved it and had to get it from her. This is a good one to take to a party or playgroup.
2 Tbl butter
16 oz bag frozen corn
1/2 tsp. salt
1/8 tsp. pepper
1 c. finely chopped onion
1 c. finely chopped red bell pepper
1/4 c. chopped green onion
1 T chopped jalapeno (I have also used green chilies if jalapenos are to hot)
2 tsp. minced garlic
tortilla chips
1 c. mayo
1 c. shredded Monterrey jack cheese
1 c. shredded sharp cheddar cheese
preheat oven to 350
In large skillet melt butter and saute: corn, salt, pepper, onions, red pepper, jalapenos and garlic until tender.
Transfer to bowl, add mayo and cheese.
Mix well while still warm and put into casserole dish and bake 10 min. until hot and bubbly and heated through.
