This is one I just made up one day while looking in my freezer. Simple and tasty.
3-4 chicken breasts
1 pkg. Ranch dressing mix
Bread crumbs
1 can evaporated milk.
1 c. mozzerella cheese ( pepper jack would work as well)
Guacamole
Mix ranch dressing mix and about 1-2 cups bread crumbs in pan. Pour evaporated milk in another pan. Dredge chicken in milk, then cover with bread crumbs and cook through in oven at 350 for about 30 min. Right before serving melt cheese on top of chicken. Add big spoonful of Guacamole on top and serve. Zach loved it since he is a big fan of Guacamole.
