Raspberry- corn muffins

This is from the Weight Watchers book. The point value is 4. You would never know these were good for you.

1 c. flour
3/4 c. yellow cornmeal
1/2 c. sugar
2 tsp. baking powder
1/4 tsp. salt
1/2 c. milk
1/4 c. canola oil
1 large egg- beaten
1 c. fresh or frozen raspberries (fresh is best)

Whisk together the flour, cornmeal, sugar, baking powder and salt in a large bowl; set aside.
Beat the milk,oil and egg in a small bowl. Add the milk mixture to the flour mixture, stirring just until cornmeal mixture is moistened. Gently fold in the raspberries.

Spray muffin tin with nonstick spray.
Fill each muffin cup 2/3 full. Bake until a toothpick inserted into a muffin comes out clean. About 12-15 min. Remove the muffins from the pan and let cool completely on a rack.

Ham and Swiss Calzone

This is from my friend Shannon. She has a cookbook, and I was looking through it trying to find something a little different to make one day. We tried this and loved it. We have made it a few times since.

2 Tbl. dried minced onion
2 Tbl. spicy mustard
1 Tbl. poppy seeds
1/2 c. butter
1 tube refrigerated French bread dough
1/2 lb. shaved ham
4 oz. grated Swiss cheese

In a small bowl, stir together the onion, mustard, poppy seeds, and melted butter until blended. Open tube of dough and unroll onto a cookie sheet. Spread 3/4 of the mustard mixture on the center of the dough, leaving a few inches on each side sauce-free. Pile ham onto the center of the dough. Sprinkle grated Swiss over ham. Drizzle remaining the mustard sauce over cheese. Fold long sides in over ham. Next, fold top and bottom ends over, to completely envelope the filling. Press to seal the seam. Slice two large slits to release steam, and place in a 350 oven for 25-30 min, or until bread is golden brown, and a little bit of the sauce is bubbling out of the vent holes. Allow to cool 10 min. before slicing to serve.

*I like to use pizza dough instead of french bread and I will also cut the butter in half. It is a little buttery for me.

Broccoli Ham Stroganoff

My sister Sonnie lived with me for one summer and this ended up being her favorite dish. We ate this a lot and never got sick of it. It is also a great recipe to use when you have leftover ham.

2 c. frozen chopped broccoli
1 Tbl. water
1 Tbl. butter
1/4 c. chopped onion
3 Tbl. flour
1 can chicken broth
2 c. fully cooked ham (cubed)
1 c. sour cream
1 small jar sliced mushrooms, drained
Hot cooked noodles

In sauce pan heat together butter and flour until thickened. Add chicken broth and sour cream until saucy. Add onion, broccoli, ham and mushrooms. Serve over hot noodles.

Peppermint Bark

This is another great one to make at Christmas time. If you love peppermint and chocolate, then you will love this.

1 pkg (12 oz) white baking chips
1 tsp. peppermint extract
8-10 drops red or green food color
1/2 c. crushed peppermint candy

Microwave choc. chips in large bowl about 1 1/2 - 2 min. until almost melted. Add extract. Stir until melted.

Spread on large foil-lined pan about 1/4 inch thick. Add food color drop by drop. Swirl through. Sprinkle with crushed candy. Refrigerate about 10 min. Break into pieces.

Pizza Dough

I got this from my sister Courtney. She makes great pizza and this dough makes the pizzas even better.

1 c. water (lukewarm)
1 tsp. sugar
1 tsp. salt
2 Tbl. yeast

Stand 5 min.

Add:
2 1/2 c. flour
2 Tbl. oil

Mix

Let rise in warm area for 20 min. until double in size. Roll and bake at 400.

Oreo Cookies

I made these for gifts to give at Christmas time. They are so good. I swear I could eat every single cookie and never get sick of them. If you try these I promise you won't regret it.

2 packages Devils Food Cake mix
1/2 c. shortening
4 eggs

Mix until smooth and sticky. Roll into balls and bake at 350 for 8 min. Flatten with spatula.

Frosting:
3 1/2 c. powdered sugar
1 stick butter (melted)
8 oz. cream cheese (room temp.)
1/4 tsp. vanilla

Mix together

Spread Cream cheese mixture between two cookie. SO GOOD!

Frosting

When I am making a cake to take somewhere this is the only frosting I will use. I also use this on my sugar cookies and I think this makes them even better. Very easy to make.

1/2 c. shortening
1/2 c. butter
1 tsp. vanilla
4 c. powdered sugar
2 Tbl. milk (for thickness)

Mix butter and shortening until smooth. Add vanilla and sugar one cup at a time. Add milk for desired thickness.

Zucchini Cookies

These are really good to make if you grow a lot of zucchini in your garden. You would never know there is zucchini in these.

1/2 c. shortening
1 c. brown sugar
1/2 c. sugar

Cream together

Add:
2 eggs
3 c. grated and peeled zucchini
1 tsp. vanilla

Mix

Add:
1 tsp. baking powder
1/2 tsp. baking soda
1 tsp. cinnamon
1/2 tsp salt
3 1/2 c. flour
1 c. chocolate chips

Bake on cookie sheet at 375 for 12-15 min.

Pinapple Drop Cookies

This is another recipe that I grew up on. It took a few years for Zach to try them. They sounded weird. As soon as he did, he loved them. I keep some in my freezer so I can always have them on hand. They make a lot, but freeze well.

1 c. shortening
1 c. brown sugar
1 c. sugar
2 eggs
2 tsp. vanilla
1 can crushed pineapple
4 1/2 c. flour
1 tsp. salt
1 tsp. baking soda
2 tsp. baking powder
1 c. chocolate chips

Cream together:
shortening, sugars, eggs, vanilla and pineapple. Mix in dry ingredients and choc. chips. Drop onto cookie sheet and bake at 375 for 12 min.

Sheath Cake

Every time I make these I always laugh because I can hear my mom and dad arguing about the name. Is it Sheath or Sheet? Love it. Either way they are great.

2 c. flour
2 c. sugar

Mix together and set aside.

In sauce pan bring to boil
2 sticks butter
1 c. water
4 tsp. cocoa

Pour over flour mixture.
Mix

Add:
2 eggs
1 tsp. cinnamon
1/2 c. buttermilk
1 tsp. baking soda
1 tsp. vanilla

Beat until smooth
Pour into greased 11 1/2x16 pan.
Bake at 400 for 20 min.

Frosting:

In a saucepan melt:
1 stick butter
4 Tbl cocoa
6 Tbl water

Bring to boil, take off heat. Add 1 box powdered sugar, one tsp. vanilla. Mix until smooth. Pour over cooled cake.

Noodles Romanoff

I love these. I make them a lot when we have company over. They are good and a little on the "fancy" side. Not very hard to make either.

1 (8 oz.) package dried wide egg noodles
1 (16 oz) carton sour cream
1/4 c. butter-melted
1/4 tsp. salt
1/4 tsp. pepper
1 small clove garlic, minced
1/4 c. grated Parmesan cheese
2 Tbl. chopped fresh chives

Cook noodles according to package directions. Drain. Stir sour cream and next 4 ingredients into noodles; sprinkle with cheese and chives. Toss and serve hot.

Blonde Brownies

I made these for playgroup today. I grew up on these and have loved them forever. It is a nice change from chocolate brownies, but just as good.

1 (16 oz) package brown sugar
3/4 c. butter
3 large eggs
2 3/4 c. flour
2 1/2 tsp. baking powder
1/2 tsp. salt
1/2 c. chocolate chips

Heat sugar and butter in saucepan over medium heat until butter melts and mixture is smooth. Remove from heat. Cool slightly. Add eggs, one at a time, beating after each addition.
Combine flour, baking powder and salt; add to sugar mixture, stirring well. Stir in vanilla. Pour into a greased 13x9 pan. Sprinkle chocolate chips on top. Bake at 350 for 25-28 min. Cool in pan on wire rack. Cut into bars.

**When these are cool, they will look like they are not done and too doughy. This is how they are. I think this makes them even better. Remember they are brownies**

Ranch Burgers

I saw a commercial for these the other day and thought they sounded good. I gave them a try last night and everyone loved them. I will be making these again very soon. SO EASY.

1 lb. ground beef
1 pkg Ranch dressing mix

Mix ground beef with the ranch dressing and make into hamburger patties. Grill or cook in pan. Either way they are very good with lots of flavor.
Dress hamburgers as you like.

Chris' Chicken Casserole

This is another one from my bridal shower. This is a good one when you need to make something earlier in the day and warm it up just before dinner.

2 c. chicken - cooked and cut into chunks
4 c. dressing ( like pepperidge farm stuffing)
1 stick butter
2 cans cream of celery soup
1 c. milk
1 sm pkg. frozen peas
2 Tbl chopped onions
salt and pepper to taste

Melt butter, mix with dressing. Put 1/2 mixture into 9x13 pan. Mix soup and milk together until smooth. Add onions and peas. Mix chicken in- pour over dressing crumbs. Top with remaining dressing.
Bake at 350 for 30 min.

*I like to add mozzarella cheese on top of the chicken before I add the rest of the dressing.*

Chocolate Caramel Cake

This is from my Aunt Sharel. She would make this for birthdays a lot. Each birthday I would always cross my fingers that this was the one she made. It is so good and easy to make.

1 pkg. chocolate cake mix
1 can sweetened condensed milk (Eagle Brand)
1 jar caramel topping
1 container Cool Whip (8 oz.)
2-3 Score or Heath candy bars

Mix cake mix as directed on box and bake in 9x13 pan. Cook cake until slightly warm. Poke a lot of holes in the cake top with a fork or a wooden spoon handle. Pour the can of sweetened condensed milk over the top of the cake. Next pour/spread the jar of caramel over the top. Refrigerate. Before serving, spread cool whip over the Caramel and top with crushed candy bars. Store in refrigerator.

Apple Crisp

This is from my sister-in-law Waylena. We don't get to see each other as much as I would like, but I know she is a great cook, and this is no exception.

1 c. flour
3/4 c. rolled oats
1 c. packed brown sugar
1 tsp. ground cinnamon
1/2 c. softened butter
4 c. chopped peeled apples
1 c. sugar
2 Tbl. cornstarch
1 c. water
1 tsp. vanilla extract
Vanilla ice cream or cool whip (optional)

Combine first four ingredients. Cut in butter until crumbly. Press half into a greased 2 1/2 qt. baking dish or a 9 inch square baking pan. Cover with apples. In a saucepan, combine, sugar, cornstarch, water and vanilla. Cook and stir until thick and clear. Pour over apples. Sprinkle with remaining crumb mixture. Bake at 350 for about 1 hour or until the apples are tender.

Poppy Seed Chicken

This recipe is one that is an absolute favorite at my house. I make this more that I should. I also use this one whenever I need to take food to friends. It is easy and very tasty.

6 chicken breasts- boil in water about 45 min.
cut into small pieces and spread into 8 1/2 x 11 pan.

Mix together the following:
1 c. melted butter
2 cans cream of chicken soup
12 oz. sour cream

Pour over chicken

Topping:
Mix together 2 sleeves of Ritz crackers (crushed)
1/2 c. melted butter
1 Tbl. poppy seeds

Sprinkle over top of casserole

Bake at 350 for 30 min.

I have had it served over noodles but we prefer to have it over rice. Both ways are great.

Best ever banana bread

This is seriously the best banana bread ever. This is the only one I will make. It is really easy, but beware it makes a lot. I usually half it and it turns out just as good.

1 c. butter
3 c. sugar
6 eggs
3 c. sour cream
4 tsp. soda
2 tsp. vanilla
4-5 mashed bananas
1 tsp. salt
5 c. flour

Cream together butter, sugar and eggs. Mix sour cream and soda together in seperate bowl and let stand until foamy. Add the sour cream with the butter mixture. Add the rest of the ingredients to the above mixture. Mix well. Place into 4 greased bread pans and bake 50 minutes at 350 or until toothpick inserted comes our clean.

7 layer dip

I have had a best friend for as long as she has been born (I am older). We have grown up together and have a ton of memories together. Food is a big part of what we like to do together. You can't hang out and laugh for hours without food being there. This is one from her. Thanks Chazel.

1 lg. (40 oz) refried beans
2 cans chopped diced green chilies (small cans)

Mix # 1 layer

2 containers guacamole dip (refrigerated)

Spread on first layer

1 large carton sour cream
Mix with 1 pkg taco seasoning

spread

2 cans chopped (drained) black olives

Layer

4 chopped tomatoes

Layer

8-10 green onions

Layer

Cover with grated cheese

Cover, refrigerated and ENJOY!



Tiny Spicy Chicken

My mom gave me a book of great recipes from all the ladies that came to my bridal shower. This is a book that I use often. This recipe is a good one when you can't get take-out.

2 1/2 lb chicken cut into small pieces
2 tsp garlic salt
1 c corn starch
2 beaten eggs
1/4 c water
1/4 c oil

Mix water and egg together, and garlic salt and corn starch together. Dip chicken in egg and water, then coat with corn starch and garlic.
Brown in oil until browned on both sides. Place on cookie sheet and cover with sauce. Bake at 350 for 45 min. Turn chicken over halfway through baking.

Sauce:
1/2 c. sugar
1/2 c. pineapple juice
1 Tbl. soy sauce
1/2 c. vinegar
3 Tbl ketchup
1/2 tsp. salt

Pour sauce over chicken and serve over rice. I like to use the pineapple (from the juice) on top as garnish.

Cinnamon Bundt Cake

My friend Angela brought this to playgroup one day and I am pretty sure everyone ended up going home with the recipe. So Good.

2 Tbl. flour
1 tsp. cinnamon
1/2 c. sugar

Mix and save

1 pkg yellow cake mix
8 oz. carton sour cream
1 pkg. instant vanilla pudding
1/2 c. oil
4 eggs

Mix and beat together for 4 min. (will be very thick)

In a greased bundt pan pour 1/2 cake batter and 3/4 cinnamon mixture- swirl through batter. Pour on remaining batter. Top with remaining cinnamon mixture. Bake in oven at 350 for 40-60 min. ( I did 50 and it was great).

When cool- drizzle powdered sugar icing over the top.
Icing:
1 c. sifted powdered sugar
1/4 tsp. vanilla
1 1/2 Tbl milk (about)

Chili Rubbed Pork Chops

This is another Weight Watchers recipe. This is 5-6 points

2 tsp. chili powder
1 1/2 tsp. packed brown sugar
1 tsp. cumin
1/2 tsp. cinnamon
1/4 tsp. salt
1/4 tsp. pepper
4 (5 oz.) pork chops
1 spray cooking spray

Mix all spices together. Butterfly chops and rub spices on both sides.
Refrigerate for 1 1/2 hours
Cook until done. Grill or Pan

Sweet Potato Souffle

Living in the south I have tried to pick up a few southern recipes. This is one that my family loves and I make a lot for company as well. A very good twist on yams at Thanksgiving.

1 large can sweet potatoes
1 tsp. vanilla
1 c. sugar
3 eggs
1/2 c. evaporated milk
1 stick butter
1/2 tsp. cinnamon
1/2 tsp. lemon

Heat potatoes in syrup, drain and whip until fluffy. Add butter and other ingredients. Beat well. Pour into buttered casserole dish. Bake about 20 min at 350.
While baking prepare the topping:

1/2 c. pecans (chopped)
1/3 c. brown sugar
1/3 c. flour
1/3 c. coconut
1/4 c. melted butter

Mix

Add topping 10 min. before taking out of oven. Turn oven down to 300. Cook until knife comes out clean. It takes about 1 hour total.


Toffee Brownies

My friend Angela made these for our family and they were so good I HAD to get the recipe. The bonus is that they are super easy.

1 (17.6 oz.) package Brownie mix with walnuts
Vegetable oil cooking spray
3 (6 oz) candy bars with almonds and toffee chips (recommended: Symphony bar)

Prepare brownie mix according to package directions.

Line a 13x9 cake pan with aluminum foil and spray with vegetable oil cooking spray. Spoon in half of the brownie batter and smooth with a spatula or the back of a spoon. Place the candy bars side by side on top of the batter. Cover with the remaining batter.

Bake according to package directions. Let cool completely

Chicken Cordon Bleu

This is from the Weight Watchers program and it is 7 points for one serving.

4 sprays cooking spray
1 lb. chicken
3 oz. cooked ham
3 oz. low-fat Swiss cheese
1/4 c. flour
1/4 c. honey mustard
1/2 c. Italian style bread crumbs

Preheat oven to 400. Coat baking sheet with spray.
Pound chicken to 1/4 thickness. Arrange 1 slice of ham and 1 slice of cheese on top of chicken
Starting on short side, roll into tight pinwheel. Tuck in ends. Secure with toothpick.
Place flour, honey mustard and bread crumbs in 3 separate bowls. Add chicken to flour, then honey mustard, then bread crumbs.
Bake about 40 min. Remove toothpicks.

Scones

This is another one from my mom. This is a total growing up recipe. We would have this a lot as a meal or just for fun. Beware: This makes a lot!!!!

In a small bowl:
2 Tbl yeast
1 c. water
1 tsp. sugar

Mix and let stand for 15 min.

In a large bowl:

Cream together
1 c. shortening
1 c. sugar
3 tsp. salt

Add:
2 eggs
4 c. water
the yeast mixture

stir in
5 c. flour

Let rise 30 min.
stir in 7-8 more cups flour

Refrigerate until ready to use

Fry in oil in frying pan until golden on both sides

*You can use these as Tacos for dinner or drizzle honey and butter or cinnamon and sugar on them. You can try all sorts of things.*


Moms Strussel

This is from my mom. I like to make this a lot and change the filling for my mood. It makes a lot but totally worth it.

1 c. butter
1 3/4 c. sugar
4 eggs
1 tsp. vanilla
1 tsp. almond extract
3 c. flour
1/2 tsp. salt
1 1/2 tsp baking powder

Cream butter, sugar and eggs. Beat well. Add vanilla and almond extract. Stir in flour and add salt and baking powder. Spread 1/2 batter in greased cookie sheet (large one). Cover with 1 large can pie filling.(I like cherry or raspberry). Drop remaining batter on top in random spots. Bake at 350 for 45 min.

Frosting:

3/4 stick butter
1 Tbl. lemon juice
1/8 tsp. salt
Add enough powdered sugar to make a glaze.
Add milk to thin

Drizzle over cooled bars.

Yum, I can taste them already!!

Sweet and sour meatballs

This will always remind me of Rapid City. I got this one from a friend that invited me and the boys over for dinner every Thursday night for 4 months while Zach was deployed. She will never have any idea how much that meant to me and helped me through it. Thanks Janene for being a great friend and for the great recipe.

1 lb. ground beef
1/2 c. rolled oats
1 egg
1/3 c. onion
3/4 tsp. salt
1/4 tsp. pepper
1 tsp. Worcestershire sauce
1/3 c. milk

mix all ingredient and form into balls. Bake at 350 for 30 min.

Sauce:
1/2 c. brown sugar
1/4 c. vinegar
1 tsp. mustard
1/4 c. barbecue sauce
1 tsp.Worcestershire sauce

heat together and pour over meat.

I like to serve ours over rice.

Manicotti

  • 20 uncooked manicotti shells
  • 2 (15 ounce) containers ricotta cheese
  • 5 cups shredded mozzarella cheese
  • 1 cup grated Parmesan cheese
  • 2 eggs, beaten
  • 2 teaspoons dried basil
  • 2 teaspoons dried oregano
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1 teaspoon seasoned salt
  • 2 (26 ounce) jars spaghetti sauce

Directions

  1. Cook manicotti according to package directions. Meanwhile, in a bowl, combine the ricotta cheese, 3 cups mozzarella cheese, Parmesan cheese, eggs and seasonings. Spread 1 cup spaghetti sauce each in two ungreased 13-in. x 9-in. x 2-in. baking dishes. Stuff manicotti shells with cheese mixture; arrange over sauce. Top with remaining sauce.
  2. Cover and bake at 375 degrees F for 35-40 minutes. Uncover; sprinkle with remaining mozzarella cheese. Bake 10 minutes longer or until cheese is melted and manicotti is heated through.
**I don't use jar spaghetti sauce. I think the package McCormick sauce is so much better. Also, this makes a lot so either half it or make sure you have company coming.**

Lime Rikki

I made this one up one day when I had NOTHING left to make. Easy to make.

3-4 chicken breasts
bread crumbs
1 egg
milk
2 limes

Beat egg with a little milk. Dredge chicken in egg mixture and then cover with bread crumbs. Place in shallow pan. Before cooking squeeze 1/2 lime over each chicken breast. Cook until done.

*I am not a fan of pico de gallo but Zach thinks this would be good with something like that added to it.

Malibu chicken

I modified this one from a chicken cordon bleu recipe I have. This is super easy and tastes just like it.

4 chicken breasts
1 can cream of chicken soup
1 cup sour cream
1 pkg ham
1 pkg swiss cheese

Place chicken in bottom of shallow pan. Mix cream of chicken and sour cream together. Layer ham and cheese on chicken. Pour cream mixture over.
Cook in oven at 350 until chicken is cooked and mixture is bubbly.

Pork Tederloin

I modified this one from a dish my mother-in-law makes. I make this at least once a month on Sundays. Crockpot recipe.

1 pork tenderloin
1 can beans ( black, red, kidney, whatever I have on hand)
season salt
salsa

I cook the tenderloin in the crockpot for about 4-5 hours on low and just season with a little season salt and 1/2 cup water.
About 30 min. before serving add can of beans and about 1 cup salsa. Warm through. Shred the meat and put beans and salsa mixture on top.

I like to layer on our plates like this:
Meat and bean mixture
Cheese
lettuce
sour cream ( I like Ranch instead, but I add ranch to everything)
Frito Chips and scoop up mixture in chips

**I know it sounds weird but I promise this is a GREAT one. I put it in the crockpot before church and it is done when we get home. **
*** Zach doesn't like the chips with his but the kids and I do. This is a good one to omit or add whatever you like.***

Caramel French Toast

I got from my friend Angela and I truly can't get enough of this. I love it!! It is so good that we now use it for our Christmas morning breakfast. It is a "make the night before" recipe.

Topping:
1 c. firm brown sugar
6 Tbl. butter
1/3 c. whipping cream
1 Tbl. light corn syrup

French Toast:

3 eggs
1/2 c. milk
1 tsp. vanilla
1/4 tsp. salt
8- 3/4 thick diagonal slices french bread

Spray 9x13 glass baking dish. In med. saucepan, combine all ingredients. Mix well. Cook over med heat till smooth. Stirring constantly. DO NOT BOIL. Spread topping baking dish. Beat eggs in dish, add milk, vanilla, salt, beat well. Dip each bread in egg mixture. Place bread in pan.
Cover, Refrigerate 8 hours or overnight.
Bake uncovered 20-25 min. @ 350 until bubbly and golden. Rest 3 min.

YUMMY!!

Steak Marinade

This is amazing! It makes your steak taste like you are at a restaurant. I made the mistake of using creamy horseredish and it was not as good. Use the "real stuff" and it is perfect.

SWEET AND SPICY MARINADE
.6 kg (1 1/4 lb.) boneless round sirloin tip or blade steak, cubed
1/3 c. horseradish
1/4 c. ketchup
1/4 c. water
1/4 c. oil
1/4 c. honey
1/4 c. chopped onion
1/4 c. red wine vinegar
2 tbsp. brown sugar
2 tbsp. soy sauce
2 tbsp. Worcestershire sauce
1/4 tsp. black pepper
2 drops Tabasco sauce

Pork pot stickers

  • This recipe is from my sister Courtney. She made these as an appetizer but they are just a great for dinner. Serve with rice when making it for dinner.

  • 1/2 pound ground pork
  • 1/4 cup finely chopped scallions
  • 2 tablespoons finely chopped red bell pepper
  • 1 egg, lightly beaten
  • 2 teaspoons ketchup
  • 1 teaspoon yellow mustard
  • 2 teaspoons Worcestershire sauce
  • 1 teaspoon light brown sugar
  • 1 1/2 teaspoons salt
  • 1/2 teaspoon freshly ground black pepper
  • 1/4 teaspoon cayenne pepper
  • 35 to 40 small wonton wrappers
  • Water, for sealing wontons
  • 3 to 4 tablespoons vegetable oil, for frying
  • 1 1/3 cups chicken stock, divided

Directions

Preheat oven to 200 degrees F.

Combine the first 11 ingredients in a medium-size mixing bowl (pork through cayenne). Set aside.

To form the dumplings, remove 1 wonton wrapper from the package, covering the others with a damp cloth. Brush 2 of the edges of the wrapper lightly with water. Place 1/2 rounded teaspoon of the pork mixture in the center of the wrapper. Fold over, seal edges, and shape as desired. Set on a sheet pan and cover with a damp cloth. Repeat procedure until all of the filling is gone.

Heat a 12-inch saute pan over medium heat. Brush with vegetable oil once hot. Add 8 to 10 potstickers at a time to the pan and cook for 2 minutes, without touching. Once the 2 minutes are up, gently add 1/3 cup chicken stock to the pan, turn the heat down to low, cover, and cook for another 2 minutes. Remove wontons to a heatproof platter and place in the warm oven. Clean the pan in between batches by pouring in water and allowing the pan to deglaze. Repeat until all the wontons are cooked. Serve immediately.


Pork chop stuffing

This was a long time ago but I remember it was very good.

1/2 c. chopped apple
1/2 cheese
2 Tbl butter
2 Tbl orange juice
1/4 tsp. salt
1/4 tsp. cinn.
1 1/2 c. bread crumbs

Mix and stuff into pork chops and cook until done.

Spinach grape salad

This is from a great friend Sarah. She made it for me when we lived in South Dakota and we have brought it with us and make it for Thanksgiving. Very good.

6 c. spinach-broken
6 oz. swiss cheese, grated
6 oz. cheddar cheese, grated
2 c. red seedless grapes, cut in half
little iceberg lettuce, broken
8 green onions, diced
8 strips bacon cooked and crumbled

Dressing:
1/4 c. cider vinegar
2 tsp. brown sugar
2 tsp. dijon mustard
1/2 cup veg. oil

Mix dressing and add to salad just before serving.

Beef and Broccoli

I don't remember much about this one, but it must have been good since I kept it.

3 Tbl cornstarch, divided
1/2 c. water
2 Tbl. water, divided
1/2 tsp. garlic powder
1 lb. boneless round steak- 3 inch strips
2 Tbl. veg. oil
4 c. broccoli florets
1 small onion, cut into wedges
1/3 c. soy sauce
2 Tbl. brown sugar
1 tsp. ground ginger

Hot cooked rice

In bowl, combine 2 Tbl cornstarch, 2 Tbl water and garlic powder until smooth.
Add beef and toss
In skillit stir fry beef in 1 Tbl oil. Remove and keep warm
Stir fry broccoli and onion in remaining oil, 4-5 min.
Add beef
Combine soy sauce, brown sugar, ginger and remaining cornstarch and water until smooth, add to pan. cook for 2 min. Serve over hot rice.

Pork Fried Rice

This is another one I got from allrecipes.com I changed a few of the measurements and I think it turned out better this way.

2 (6 oz) boneless pork chop
1/2 c. and 2 Tbl finely chopped carrot
1/2 c. and 2 Tbl chopped fresh broccoli
1/2 c. and 2 Tbl frozen peas
2 green onion, chopped
2 Tbl butter
2 eggs, beaten
3 Tbl soy sauce
1/4 tsp. garlic powder
1/4 tsp. ground ginger

In large skillet, saute the pork, carrot, broccoli. peas and onion in butter until pork is no longer pink. Remove from skillet and set aside. In same skillet, cook and stir egg over medium heat until completely set. Stir in the rice, soy sauce, garlic powder and pork mixture; heat through.

Chicken Ole

This is one I just made up one day while looking in my freezer. Simple and tasty.

3-4 chicken breasts
1 pkg. Ranch dressing mix
Bread crumbs
1 can evaporated milk.
1 c. mozzerella cheese ( pepper jack would work as well)
Guacamole

Mix ranch dressing mix and about 1-2 cups bread crumbs in pan. Pour evaporated milk in another pan. Dredge chicken in milk, then cover with bread crumbs and cook through in oven at 350 for about 30 min. Right before serving melt cheese on top of chicken. Add big spoonful of Guacamole on top and serve. Zach loved it since he is a big fan of Guacamole.

Easy Pepper Steak

This is one I got off the internet and found it to be very easy and tasted ok. I would make it again.

2 lbs. sirloin steak
1 pkg. brown gravy mix
3/4 c water
1 tbs. soy sauce
1 Tbs canola oil
1 tsp garlic powder
1/4 tsp. pepper
1 onion (sliced)
2 bell pepper cut in strips
4 c. cooked rice

Heat oil in large skillet and saute steak strips until brown. Combine brown gravy mix, water, soy sauce, garlic powder and pepper. Stir into steak mixture. Bring to a boil and simmer for 10 min. Add onion and bell pepper and simmer 10 more min. Serve over rice.

Corn Dip

I got this from my great cousin-in-law Steph. She made it for a Thanksgiving appetizer. I loved it and had to get it from her. This is a good one to take to a party or playgroup.


2 Tbl butter
16 oz bag frozen corn
1/2 tsp. salt
1/8 tsp. pepper
1 c. finely chopped onion
1 c. finely chopped red bell pepper
1/4 c. chopped green onion
1 T chopped jalapeno (I have also used green chilies if jalapenos are to hot)
2 tsp. minced garlic
tortilla chips

1 c. mayo
1 c. shredded Monterrey jack cheese
1 c. shredded sharp cheddar cheese

preheat oven to 350

In large skillet melt butter and saute: corn, salt, pepper, onions, red pepper, jalapenos and garlic until tender.

Transfer to bowl, add mayo and cheese.
Mix well while still warm and put into casserole dish and bake 10 min. until hot and bubbly and heated through.


Mom's Texas Potatoes

These are made famous by my mom. I usually make these for our Christmas Eve dinner because it reminds me of being home. Very easy to make and great as a side dish.

4 cups potatoes ( in small chunks)
1 cup diced onion

White Sauce:

2 Tbl. butter
4 Tbl. flour
1 tsp. salt
1/2 tsp. pepper
2 c. milk
2 c. cheese

Mix the white sauce together in a saucepan and cook until thick and bubbly.

Drain potatoes, add white sauce. Put in 2 qt. casserole dish and top with bread crumbs.
Cook at 275 for 45 min.

*When I make these I don't use the bread crumbs. I just mix the potatoes and white sauce together and serve immediately.*

Caramel Apple Cheesecake

I was watching Paula Dean one day and this was the dessert she was working on. I thought it sounded yummy so we gave it a try. It has now become Zach's favorite dessert. Give it a try, I promise you will love it.

1 (21 ounce) can apple pie filling
1 (9 inch) graham cracker crust
2 (8 ounce) packages cream cheese, at room temp
1/2 cup sugar
1/4 tsp. vanilla extract
2 eggs
1/4 cup caramel topping
12 pecan halves, plus 2 TBL chopped pecans

Preheat the oven to 350 degrees
Reserve 3/4 cup of the apple filling; set aside. Spoon the remaining filling into the crust. Beat together the cream cheese, sugar, and vanilla until smooth. Add the eggs and mix well. Pour this over the pie filling. Bake for 30-35 min. or until the center is set. Cool to room temp.
Mix the reserved pie filling and caramel topping in a small saucepan and heat for about 1 min. or until spreadable. Spoon the apple-caramel mixture over the top of the cheesecake and spread evenly. Decorate the edge of the cake with pecan halves and sprinkle with chopped pecans. Refrigerate the cake until ready to serve.

**I usually don't do the pecans and it turns out just as great!**
