Lime Cilantro Sweet Potatoes

I LOVE sweet potatoes.  I love them with marshmallows and I love them with brown sugar and pecans, I love them with just salt and pepper.  Any way I can eat them, I will.  I thought I would try something different and I am glad I did.  This is probably my new favorite way to eat these.  I could eat them all day.  Enjoy.

I don't really have a recipe, so..... just do your best ;)

4 sweet potatoes
olive oil
lime juice
cilantro
salt
pepper

Preheat oven to 425
Peel and cut the sweet potatoes into bite size pieces. Put in large baking sheet.  Drizzle olive oil over potatoes and sprinkle with salt and pepper.  Place in oven for about 30 min.  Depending on how soft you like your potatoes.
Drizzle lime juice over potatoes and then sprinkle fresh or dried cilantro on top.(I like dried)  Just as much as you like.  Aynslee said mine were too sour, Zach and I loved it the way they were.  It depends on your taste.

Island Pork Tenderloin

Zach and I did P90X a few months ago and as hard as the workout was, the diet was even harder for me.  I LOVE to cook and a lot of the things I make were not on the diet.  Luckily P90X has a few recipes that were really good.  This is one of them.  This is good to eat alone, in a salad or wrapped in a tortilla.  I like to double this recipe and eat it for lunch for a few days.

Island Pork Tenderloin

16 oz. Pork tenderloin
1/2 tsp. salt
1/4 tsp. pepper
1/2 tsp. Chile powder
1/2 tsp. cumin
1/2 tsp. cinnamon
2 tsp. olive oil
1/4 cup brown sugar, packed
1/2 TBL fresh garlic, finely chopped
1/2 TBL tabasco sauce

Preheat oven to 350.  Stir together salt, pepper, cumin, chile powder, and cinnamon, then coat pork with the spice rub.  Heat 1 TBL oil in skillet over moderately high heat and brown pork, turning, about 4 min. Stir together brown sugar, garlic, and tabasco and pat onto top of tenderloin.  Place pork in roasting pan and cook in the oven for 20 min.

* I just put mine on a big cookie sheet and I bake for 30 min when I do 2 of them.

I have been trying to watch what I eat, counting calories and all those terrible things.  I thought at first, "hey, maybe I will cut out my sugar and then I won't have to count as much."  Um......that lasted about a day.  So, I decided that I will keep eating sugar, just not as much.  I started looking for low calorie recipes and I found this one on Six Sisters website.  I made these today for dessert, and I can tell you that THEY ARE AMAZING!  Combined with how they taste and how easy they are to make, they will be a go to recipe for a long time.  They can also be made with different combinations.

Skinny Cookies n' Cream Cupcakes Recipe:
(makes 24 cupcakes)

Cupcake Ingredients:
1 pkg. Devils Food Cake Mix
(just the powder, not the recipe on the box)
1 (12 ounce) can Diet Coke

Cupcake Directions:
Preheat oven to 350 degrees.
  Line 24 cupcake tins with paper liners. 
In a large bowl, combine cake mix and Diet Coke together. 
 Continue to mix until the batter is smooth without any lumps. 
Pour approximately 1/4 cup of batter into every cupcake wrapper. 
 Bake at 350 degrees for 20 minutes.  Let cool before frosting. 
 
Frosting Ingredients: 
1 (8 ounce) container Fat Free Cool Whip
1 (4.2 ounce) pkg. Oreo Cookies and Cream
 Jell-o Instant Pudding and Pie Filling

Frosting Directions:
In a mixing bowl, add Cool Whip and pudding. 
 Mix with a whisk by hand or an electric hand mixer until smooth. 
 Spread over cooled cupcakes.  Makes enough frosting for 24 cupcakes.

Each cupcake: 121 calories, 24 carbohydrates, 2 grams fat, 1 gram protein
