Apple Crisp

This is from my sister-in-law Waylena. We don't get to see each other as much as I would like, but I know she is a great cook, and this is no exception.

1 c. flour
3/4 c. rolled oats
1 c. packed brown sugar
1 tsp. ground cinnamon
1/2 c. softened butter
4 c. chopped peeled apples
1 c. sugar
2 Tbl. cornstarch
1 c. water
1 tsp. vanilla extract
Vanilla ice cream or cool whip (optional)

Combine first four ingredients. Cut in butter until crumbly. Press half into a greased 2 1/2 qt. baking dish or a 9 inch square baking pan. Cover with apples. In a saucepan, combine, sugar, cornstarch, water and vanilla. Cook and stir until thick and clear. Pour over apples. Sprinkle with remaining crumb mixture. Bake at 350 for about 1 hour or until the apples are tender.
